Orzo with Garlic-Ginger Vegetables
1 tblsp olive oil
2 tblsp minced ginger
3-4 minced garlic cloves
1-2 c diced carrots
1-2 c diced zucchini
1-2 diced red or yellow pepper
3/4 c chicken broth
cooked orzo
ground pepper
Heat oil over medium to low heat in a large skillet.
Saute ginger and garlic until deep brown, 4-5 minutes (I had to go much longer than that).
Increase heat to high; add carrots.
Stir-fry, adding the zucchini, peppers, and chicken broth, about 3 minutes.
Add the orzo and pepper; toss to combine.
