Southwestern Chicken and Black Bean Burritos
 
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • cooked chicken
  • 3 tblsp smoky barbecue sauce
  • salt and pepper
  • shredded lettuce
  • 6 green onions, thinly sliced
  • tortillas
  • Heat a skillet over medium high heat.
  • Add oil. Cook onions and garlic until onions are soft, about 5 minutes.
  • Add chicken, beans, and barbeque sauce. You can toss in some frozen corn too. Heat through.
  • Pile chicken and beans onto tortilla. Top with lettuce and green onions (although I often leave these out). Wrap and roll.
