Southwestern Chicken and Black Bean Burritos
1/2 onion, chopped
2 cloves garlic, minced
1 can black beans, drained and rinsed
cooked chicken
3 tblsp smoky barbecue sauce
salt and pepper
shredded lettuce
6 green onions, thinly sliced
tortillas
Heat a skillet over medium high heat.
Add oil. Cook onions and garlic until onions are soft, about 5 minutes.
Add chicken, beans, and barbeque sauce. You can toss in some frozen corn too. Heat through.
Pile chicken and beans onto tortilla. Top with lettuce and green onions (although I often leave these out). Wrap and roll.
