Ham and Mushroom Fettucini
 
  • 3/4 lb cooked ham
  • 2 tblsp oil
  • 1 onion, finely chopped
  • 1/2 lb mushrooms
  • 1 tblsp all-purpose flour
  • 1/2 tsp rosemary
  • 1/4 tsp pepper
  • 1 1/4 c fat-free evaporated milk
  • 1/2 c frozen peas, thawed
  • cooked fettucini
  • Saute ham in oil until lightly browned. Remove with a slotted spoon.
  • Saute onion for 4 minutes.
  • Add mushrooms and saute 3 minutes.
  • Stir in flour, rosemary, and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes until thickened.
  • Stir in fettucine, ham, and peas.
