Butterscotch Shortbread
1 c shortening (part butter or margarine)
1/2 c brown sugar
1/4 c granulated sugar
2 1/4 c flour
1 tsp salt
Heat oven to 300 degrees.
Mix shortening and sugars thoroughly.
Measure flour by dipping method or sifting. Mix flour and salt; stir in and mix thoroughly.
Roll out 1/4 inch thick between 2 sheets of waxed paper and cut with small cookie cutters (or a glass).
Place on ungreased baking sheet.
Bake 20-25 minutes (check after 15).
