Fish Tacos
 
  • 1 pack (1oz) Hidden Valley Ranch Dressing Mix
  • 1 c mayo
  • 1/2 c milk
  • 1 lime
  • 2 cloves garlic, roughly chopped
  • 1/2 c roughly chopped cilantro
  • 1/4 c La Costena green salsa
  • tilapia
  • southwest or taco seasoning
  • oil and butter
  • flour
  • tortillas
  • cole slaw mix
  • Place milk, mayo, and ranch mix in a blender.
  • Juice the lime in there too.
  • Toss in the garlic, cilantro and green salsa.
  • Blend and put in the refrigerator for several hours to thicken.
  • Put about 1 tblsp of oil and 1 tblsp of butter in a saute pan and heat over medium high heat. You know it's ready when a small pinch of flour starts sizzling and turning light golden brown.
  • Cut the fish in half lengthwise. Sprinkle salt and seasoning on both sides and dredge in flour. Drop into the pan.
  • Cook until golden brown on each side.
  • Assemble tacos with fish, cole slaw mix, and cilantro-ranch dressing. Lord that's good.
