Black Bean Soup with Spicy Sausage and Chicken
2 tblsp olive oil
1 lb spicy sausage
2 c chopped carrots
1 1/2 c chopped onion
1 1/2 c chopped celery
2 bay leaves
6 garlic cloves, chopped
2 tblsp chopped fresh thyme
5 c (or more) chicken broth
3 15 oz cans black beans, drained and rinsed (I use 2)
1 lb chicken breasts, cubed
Heat oil in heavy large pot over medium-high heat. Add sausage and next 4 ingredients. Saute until sausage is cooked through.
Add garlic and thyme; saute 2 minutes.
Add 5 cups broth; bring to boil, reduce heat to medium, and simmer 20 minutes.
Add beans and chicken; simmer until chicken is just cooked through, about 10 minutes, adding more broth if desired.
Discard bay leaves. Season with salt and pepper.
