Black Bean Soup with Spicy Sausage and Chicken
 
  • 2 tblsp olive oil
  • 1 lb spicy sausage
  • 2 c chopped carrots
  • 1 1/2 c chopped onion
  • 1 1/2 c chopped celery
  • 2 bay leaves
  • 6 garlic cloves, chopped
  • 2 tblsp chopped fresh thyme
  • 5 c (or more) chicken broth
  • 3 15 oz cans black beans, drained and rinsed (I use 2)
  • 1 lb chicken breasts, cubed
  • Heat oil in heavy large pot over medium-high heat. Add sausage and next 4 ingredients. Saute until sausage is cooked through.
  • Add garlic and thyme; saute 2 minutes.
  • Add 5 cups broth; bring to boil, reduce heat to medium, and simmer 20 minutes.
  • Add beans and chicken; simmer until chicken is just cooked through, about 10 minutes, adding more broth if desired.
  • Discard bay leaves. Season with salt and pepper.
