Hamburger Beef Stir Fry
 
  • 1 1/2 c jasmine or Minute rice
  • 2 pounds hamburger
  • -------
  • .4 cup (a little under 1/2 cup) soy sauce. We find it's good to have a mix of regular and low-sodium.
  • 70 g light brown sugar (dark brown is fine too)
  • between 1 and 2 tablespoons rice vinegar
  • 1 tablespoon (3 tsp) toasted sesame oil
  • 1 teaspoon dehydrated garlic
  • 1 teaspoon ginger
  • -------
  • 1 onion
  • 1 bell pepper
  • 1 bunch of broccoli
  • Get your rice going. If it's Minute rice, use the same amount of water as rice and add the rice to boiling water. Then cover and turn off the heat until ready to eat. If it's jasmine, follow the recipe for that.
  • Mix together the stir fry sauce. Set aside.
  • Slice an onion: Cut the bottom off to stabilize it. Then slice it in half through the rooty end and remove the outer paper layer on each half. Then for each half cut straight lines from the root down, but don't cut through the root. Then slice off the rooty end. Set aside.
  • (If you want peppers, and there are some sliced leftover in the fridge, grab them and set aside.
  • Wash and cut your broccoli so that you only have the top pieces. Add broccoli pieces to a large, microwave-safe bowl along with 3-4 tablespoons of water. Cover the bowl with a large plate and microwave for 1 ½ minutes on high power. Alternatively, you can steam them on the stove by bringing about an inch of water to boil in a reasonably size pot, putting the broccoli in a steamer basket in the pot, and covering tightly; after 5 minutes, turn off heat and take the broccoli out of the pot. Set aside.
  • Get a pound of hamburger from the freezer. Take off the aluminum foil and put it on a plate. Use the defrost function on the microwave, making sure to turn the meat over when it beeps at you. When it's done, take the plastic wrap off. Do the same thing for the second pound. Or use 2 pounds of fresh hamburger.
  • Get the nice saute pan and the black plastic turner (not anything metal!). Put the saute pan on the burner and turn to High.
  • Use the turner to break up the hamburger and stir it around until you don't see any more pink. Take it off the burner and scoop out the grease into the grease jar under the sink. Then dump the cooked hamburger into a bowl and wipe out the pan with a paper towel.
  • Now is the time to set the table, because from here on out you're cooking non-stop.
  • Put the pan back on the burner and make sure it is on High heat. Put in 1 tablespoon of canola oil and wait for the oil to look shimmery. Put in a tiny bit of onion and make sure it sizzles.
  • Carefully dump in the rest of the onion and use the black plastic turner to stir - let it rest a little to fry - stir - fry - stir - fry. Careful not to get hot oil on your hands. The onions will pretty quickly start turning translucent and hopefully light brownish.
  • Dump in the pepper if you're using and stir - fry - stir - fry.
  • Dump in the cooked broccoli and stir it up.
  • Dump in the cooked hamburger and stir it up.
  • Dump in the stir fry sauce and stir it up.
  • Once the sauce is hot, you can serve it with the rice. Enjoy!
