- Stir oats, boiling water, and butter in bowl of stand mixer and let sit about 10-20 minutes.
- Add everything else plus 1/2 cup cold water (I often add a little more).
- Mix with a dough hook 1 minute on low, then up to 8 minutes on medium-low. Dough will be sticky.
- Shape into ball and transfer to a lightly greased bowl. Cover with plastic wrap and let rise until doubled in volume, 1 - 1.5 hours.
- Grease 9 inch round cake pan.
- Transfer dough to lightly floured surface and pat gently into square. Cut into 3 rows by 4 rows, or 12 equal pieces. Roll each one and put into pan (3 in middle).
- Cover with reserved plastic wrap and let rise until no gaps, 45-60 minutes.
- Bake at 375 25 minutes. Let cool in pan for 3 minutes, then cool 20 more on a rack.
