Yellow Rice and Black Beans
2 tsp olive oil
1 medium onion, chopped
1 tsp cumin
1/2 tsp turmeric
1 c long-grain rice
1 tsp salt
2 c water
1 can black beans, drained and rinsed
1 medium jalepeno pepper, seeded and minced
1/4 c coarsely chopped cilantro
juice of one lime
Warm 1 tsp of oil in medium saucepan over medium heat.
Add onion, cumin, and turmeric; cook 2 minutes; stirring.
Add rice and cook 1 minute more, stirring.
Add salt and water; increase heat and bring to a boil. Reduce heat to low; cover and simmer 18 minutes.
Stir in beans, pepper, cilantro, and lime juice.
Cover and let stand 5 minutes.
